A quick dinner for the kids tonight.

Deboned chicken drumstick, lightly marinated, fried in the steak pan,
With roasted garlic rosemary smashed potatoes* and cucumber with shredded carrots. A light drizzle of extra virgin oil became the sauce.

*smashed potatoes is simply boiled drained potatoes (skin on) and lightly broken up with a fork and flavoured with rosemary, garlic, salt & pepper and olive oil before roasting. This gives nice charred edges and crunchy bits and pieces.
Hazel loves cucumbers but see how quickly she has removed all the shredded carrots to the side.

Yes, they are as juicy as they look.
