Children's dinner. Baked chicken drumsticks with herby breadcrumb coating.

First make the coating which is garlic, parsley, breadcrumbs, salt & black pepper and any kind of dried herbs (I used marjoram/thyme and parsley). Add olive oil to breadcrumb mixture. I guess you can add some parmesan too but I didn't want to 'complicate' the flavours.
Marinate chicken beforehand and pat breadcrumb mixture all over.
Put into hot oven and bake for approx 40 minutes till chicken is cooked and coating crispy and crunchy. It's almost like fried chicken without the fried.

Serve with fried potato rings.

Eat with sliced cucumbers.

Where do you get fresh thyme anyway? Or did you used the dried kind?

Hi KE, it's quite easy and best of all you get the taste of 'fattening' food without having to deep fry.
