RECIPES

For Justin. Hello Justin, I hope your Mum will make this for you soon, or surprise her by making it for her :-)

Salt & Pepper Spiced Tofu


2 blocks fresh tofu
Cornstarch, five spice powder, salt
Garlic, Shallots finely chopped
1 chilli finely chopped
1. Cut tofu into large chunks, pat dry with kitchen paper, lightly dust with cornstarch flavoured with five spice powder and salt.
2. Deep Fry (or panfry) till crispy on the outside.
3. Drain on kitchen paper and put on a nice plate.
4. Fry garlic, shallots till crispy, add chilli last and season with more salt & five spice powder.
5. Drizzle oil mixture on top of tofu (or you can add tofu to the oil mixture while it is still in the pan). I have a spiced salt which I buy from HK and I sprinkle a little of this over the tofu for extra taste but if you don't have this, don't worry, just the ingredients mentioned will be absolutely fine.

MARINADE FOR FRIED CHICKEN

Light Soy, Oyster Sauce, Salt, White Pepper, Chinese Cooking Wine (optional), Grated Ginger, Sesame Oil & pinch of sugar.

Wash and dry chicken parts or wings, drain thoroughly, marinate for at least 6 hours. Dust with cornstarch and deep fry in a large wok. Serve with any type of chilli sauce.
