After a crazy day out at sea, we popped over to Jerudong fish market where PT and Wm bought 3 large groupers. As soon as we arrived home, a huge one was cut into two and instantly steamed the Cantonese way lightly marinated with salt, white pepper, ginger & a dash of light soy.
Once cooked, pour away some of the stock, and add a nice light sauce of light soy, sugar, water, white pepper and a lot of spring onions. Then in boiling hot oil, quickly saute some sliced ginger and pour over the fish and wait for the exciting sizzling sound.
Serve immediately with a lot of white rice. The sauce will be amazing. Every drop was mopped up.
We had 2 plates of fish, steamed in 2 separate woks simultaneously.
After the harrowing day, if not for my calming, comforting rice porridge, I would have had to reach for artificial means.
Look at this crazy lot pretending to have fun, trying to persuade me to get into the water. They saw small corals, darting little colourful fishes and tiny little sparkles of jelly fish which stung ever so slightly. The quietness of the sea was only disturbed by their excited calls to each other.
This is me here, huddled in a huge warm beach towel, drinking a cup of hot lemon Earl Grey and reading the paper while the rest continued their relentless torture of themselves by skiing, wakeboarding and more crazy go's on the flying fish. Their self-inflicted torture continued for two whole hours. I shut my ears to their whoops and shouts of excitement and still cocooned in my towel, I went on to a nice nap on the lounger.
