Chicken Pot Pie (or Chicken round baking dish pie whatever you want to call it). Here is a quick and easy pie which I made for my kids' dinner tonight.

Tender chicken pieces with a creamy sauce with mushrooms & assorted vegetables scented with thyme and parsley - topped with golden puff pastry.

A step by step.
Debone/skin chicken legs and cut into even cubes; marinate with salt/pepper/parsley and bit of olive oil. Put aside.
Shred oyster mushrooms and fry with a drop of oil to release excess liquid.
In separate pan, saute onions gently; turn up heat and add chicken - brown evenly.
Add a tablespoon of flour to the browned chicken and fry again till flour is lightly browned; add a dollop of butter; then cream and seasoning. Add corn kernels and frozen vegetables. I added a small section of a vegetable broth cube for extra flavour. Simmer gently (do not boil!!). If mixture is too thick add a little milk.

Brown herb sausages; cut into rings and add to chicken mixture. There you are; it's almost ready - heady scents of butter, cream, thyme, browned chicken pieces and sausages wafted through the kitchen attracting curious humans to discover the source.

Then the fun part, scoop the creamy chicken mixture into a pie dish; top with frozen (but of course) puff pastry and feel free to shape as you wish. Bake in hot oven for 20 mins and serve piping hot when pastry is golden and risen. Yummy....

There is some chicken filling left tightly covered in the fridge. Mark wants it over pasta tomorrow and I could make some mini pies to use up some of the pastry.

Hi E, juz 2 seek ur expertise advice on baking the chix wings as i hardly use my conventional oven. I thought of baking some on tmr evening and had marinade them with Char Siew sauce, oyster sauce, pepper, Maggi soy sauce, pepper and dizzling of lemon juice. Had i miss up anything or added 2 many seasoning? Oso pls advice d heat and duration baking time? Tks

Hi there chanelicious. That does seem quite a lot of seasoning but could turn out pretty interesting! I use an electric oven and I think mark 6/7should be ok; approx 40to60minutes. Hope it turns out great. E.

Luckily they turned up to be quite delicious n my family liked the taste too. Perhaps u can try my recipe,haha (I actually forgot 2 mention i added some mashed garlic, red onions n a few slices of ginger). I was shifting between 180 to 200 degree in the middle of baking.Wat's d best temperature for baking chix n jacket potatos?

Hello chanelicious - that's great to hear. I would usually roast my chickens on mark 6/7 for approx 1.5 to 1.75 hours for a chicken just under 2 kgs. Keep covered with foil if chicken gets too brown and lower heat a notch and remember to keep basting. Hi Z. Z? Z! Is that chu!?? (apologies for sounding like a maniac if you're not :-) haha It's from Supa Save; they come in pre-cut square sheets with plastic in between - the brand is Pampas; look in the frozen roti/breads section near ice-cream. Good luck! ym
