Ingredients: Salt, Black Pepper, Raw grated garlic (1 or 2 cloves), good quality olive oil, chilli flakes and dried parsley (or fresh). Add small amount of grated parmesan cheese if you wish.
Make the 'oil mixture' by combining all the above ingredients in a deep bowl.
For PERFECT al dente pasta, boil for 2 minutes LESS than stated time on packet. By the time, you've drained, tossed and brought the pasta to the table, it will reach absolute perfect doneness.
Add about 3 to 4 tablespoons of pasta water to the oil mixture, drain pasta and add to oil mixture. Toss and adjust seasoning to taste.
