It was such a wet, grey and miserable afternoon. It was almost 5 pm when I received an email from M describing her packed lunch which was chicken with ginger and rice wine. After work, I sped off to a supermarket to buy some chicken legs and ginger, and look at my dinner that evening.


A lovely pot of chicken in rice wine and lots of ginger juice ...............

1. Finely grate a LOT of ginger, add a small cup of water and soak ginger for a while. Squeeze juice out and put aside.



2. Clean, deskin and chop chicken into small pieces. Marinate with light soy, salt, corn starch, 1/4 teaspoon sugar and sesame oil.
3. Brown garlic in sesame oil, add chicken, add ginger juice and cook briefly.



Add a bottle of rice wine and simmer gently.Do not boil otherwise the alcohol content will evaporate and we don't want that!
