A simple salad of sweet roma tomatoes, mozarella cheese, with balsamic dressing - nice, simple and easy to gently ease your tummy into the delicious main courses.....

Or something slightly heavier?

Fresh Tasmanian Salmon Carpaccio Marinated in Fresh Dill Oil and Rocket Salad

This is what you must have when you're craving for a rich, tasty, robust, carboey dish. It's delicious and so so satisfying. It comes in starter or main course portions at $12 and $20 respectively.
Risotto with Mushrooms and Duck does not sound greatly exciting but the duck is no ordinary duck, it's duck confit shredded, and arborio rice slowly cooked in olive oil, onions, garlic, and gorgeous home-made broth, cheese and butter, garnished with fried finely shredded duck. The resulting dish is just a huge steaming plate of creamy rice (with a tiny tiny bite to them), bathed in flavour, punctuated with delicious meat and fresh mushrooms... aaaahhhhhhhh......

Fileto di Manzo
Fillet of Beef Tenderloin Rossini with Chicken Liver, Sauteed Spinach, Truffle Jus & Roasted Kipfler Potatoes (go for rare for meltingly tender meat)
Note to self - don't blog about food when hungry - I'm going to look for breakfast now, and cook a beef shank casserole, and I'll make some pies out of them too......

Pablo, food looks great yeah? But just to clarify that I didn't cook this - I took these pics during one dinner service in the kitchen.
