Answers to questions on the tagboard

Hello everyone who left messages on the tagboard.

For Guest who asked about crispy batter:

I usually make mine with self raising flour (about 10 heaped tablespoons) and a tablespoon of cornstarch. Add water slowly in a drizzle until the batter is thick and smooth. If there are any lumps, just pour through a sieve. Dip food into the batter and deep fry in moderately hot oil. Do season batter lightly with salt and white pepper. I used to make a more elaborate version with a teaspoon of oil and ice-cubes but find it makes no difference whatsoever so have left them out.

For Potato Lover who asked about the Roasted Potatoes (I assume it's the potato wedges?) and Lauktamban who asked about the Cheesy Potato Wedges, here is the recipe.

4 to 5 large potatoes (skin on)
Boil till partially cooked and cut into wedges
Season with salt, black pepper, garlic salt, very light dusting of assorted herbs and minced garlic
Drizzle with some olive oil
Top with shredded cheddar cheese
Roast on high heat till cheese has melted and is crispy
