When you are really dog tired and all you want to do is sleep and find your kids starving at 1 pm, this is what you give them. Toasted tuna cheesy bread. I made two plates of this and went back to snoozy land immediately after.

p.s. In our household they are called 'slippers' for their shapes.

I made a Chinese chicken salad today. This is yet another very easy recipe. First you clean the chicken thoroughly and put aside. Next add crushed ginger, whole white peppercorns, five spice powder, salt, Chinese cooking wine, sesame oil and light soy into a pot of water.
Add the raw chicken and let the water come to a boil. Turn heat down and simmer gently for 20 mins. Turn heat off and let chicken sit in the hot stock till it is cooled.

Next remove chicken and reduce stock gently. Put chicken in the fridge to cool. And debone it and return it into the fridge. Just before serving, pour a few tablespoons of cool stock over chicken and add fried garlic chips and oil. Garnish with chopped chinese parsley.

The Birthday Cake. Way too sweet for all of us but very nice all the same - with real real chocolate and none of those chocolate 'flavouring'/brown colouring which certain cake shops are so fond of using.

It can't be easy to serve hundreds of guests sitting in the tiered seats of a theatre but I think the Empire did it pretty well - the food came out hot and was pretty good despite the volume they had to prepare.

There seem to be a lot of these 'lazy' posts recently!
